Ingredients:

  • 2 cups of long-grain parboiled rice

  • 1 onion, finely chopped

  • 2 cloves of garlic, minced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 3 ripe tomatoes, blended into a smooth puree

  • 2 tablespoons of tomato paste

  • 1 cup of chicken or vegetable broth

  • 1 teaspoon of thyme

  • 1 teaspoon of curry powder

  • 1 teaspoon of paprika

  • 1 teaspoon of dried or fresh parsley

  • 1 teaspoon of ginger powder

  • 1 scotch bonnet pepper (optional, for heat)

  2. Sauté the Aromatics: Heat the vegetable oil in a large skillet or pot over medium heat. Add the chopped onion and garlic, sautéing until they turn translucent and fragrant, about 3-4 minutes.

  3. Add the Bell Peppers and Tomatoes: Stir in the diced bell peppers and cook for an additional 2-3 minutes until they begin to soften. Then add the tomato paste and cook for another minute, stirring constantly.

  4. Incorporate the Tomato Puree: Pour in the blended tomato puree, stirring well to combine with the aromatics. Allow the mixture to simmer for 5-7 minutes until it thickens slightly and the raw tomato flavor cooks off.

  5. Season and Spice: Season the tomato mixture with thyme, curry powder, paprika, ginger powder, parsley, salt, and pepper. If you desire a spicy kick, add the chopped scotch bonnet pepper at this stage. Adjust the seasoning according to your taste preferences.

  6. Add the Rice and Broth: Once the tomato mixture is well seasoned, add the rinsed rice to the pot, stirring until it is evenly coated with the sauce. Pour in the chicken or vegetable broth, ensuring that the rice is submerged in liquid.

  7. Simmer to Perfection: Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot with a tight-fitting lid. Allow the rice to simmer undisturbed for 20-25 minutes, or until the grains are tender and have absorbed all the liquid.
